Delicious Six Week Bran Muffins From Holly's Kitchen

Lately I have been talking to many friends and sharing recipes and I have had a lot of requests for a muffin recipe that I got from my friend, Holly.  These muffins are healthy and delicious and our whole household loves them!
Six Week Bran Muffins
1 20 oz box of raisin bran
1 cup butter or oil
2-3 cups brown sugar
4 eggs, beaten
1 qt buttermilk
5 cups of flour ( 2 wheat flour 1/2 cup wheat germ and 2 1/2 unbleached white flour) (or any variation you want)
5 tsp baking soda
2 tsp salt

Stir all dry ingredients together and then add liquid ingredients and beat.
(optional variation)
Add 2 tsp cinnamon
More raisins
3 medium apples chopped
cup of walnuts
(Get creative and have fun)

Cook 350 degrees for 20 minutes
If you add apples the muffins need to cook for 25 minutes

Sometimes I make them with raisins only and sometimes I make them with raisins and walnuts but our favorite is raisins, apples, and walnuts!  You really have alot of freedom with these muffins.  When I make these I let them cool and then place them into ziploc bags in the freezer. I pull out a bag and let them thaw as we want them. We eat these all month!  Delicious.
