Low Cal Ice Cream Sandwiches- A Timeless Treat!

I remembered these tasty treats the other day and just had to make some. I actually learned about these wayyyyy back when I was attempting Weight Watchers, I think after Andrew was born. These are sooo easy and cheap and good for everybody in the family.
Needed: whipped cream (lite or original) I used the Publix brand (lite) because it was much cheaper than cool whip, even with a coupon. And lite because, well, Mommy is on a diet.
graham crackers (low cal or original) I used Publix brand again because they were much cheaper and these are the Honey Graham flavor.
Place whipped cream in btwn crackers and stick them in the freezer to get really cold. VOILA! Ice cream sandwiches! 2 crackers stuck together on top and two crackers stuck together on bottom with whipped cream in the middle is just the right size for us! My kiddos love them and they were totally fooled. They both asked me, "When did we get ice cream?"

Before putting them in the freezer, I wrap them individually in a small piece of plastic wrap, stack them up in my trusty plastic container and they are ready to go. Notice there are bigger ones-those are for Joey, who normally is a hater of most things white and creamy including cool whip, but he was fooled too and thinks these are awesome. HA!
